3 Amazing soups, for those in search of magical ingredient combinations without trying to go to fancy. Soup is always best when eaten slow to enjoy its main components. In every culture it has always been among its most important culinary proposals and each and every country has its own representative soup.

The use of high quality ingredients and proper techniques has always been imperative in achieving a great soup. Love the convenience of a one-dish meal and enjoy these soups. Provide a toppings bar (use gelatin cups) of crumbled bacon, nuts, shredded cheddar cheese, thinly sliced green onions or chopped parsley if you want a more fancy display of your culinary love.

NOTE: To every serving bowl add one slice of dairy or non dairy cheese (mozzarella, manchego, cheddar, etc) to center bottom of plate, just before adding the hot soup. The soup will melt the cheese and stick to some ingredients. Top it all with croutons / delicious!!

Ingredients
  • 3 cups broccoli chopped
  • 1 regular can corn will use corn and liquid
  • 1/3 lbs bacon regular raw bacon
  • 1 cup onions diced
  • 6 cups Soup Stock Beef, chicken, veggie, your choice

Instructions
  1. Put water to boil to make your vegetable, beef, or chicken stock. Depending on your diet use only stock or half stock / half milk
  2. Prepare your ingredients to use. Chop the broccoli, onions, bacon, and empty the contents of your can of corn.
  3. Sautee the onions and the bacon in a soup pot for aprox. 15 min med-high heat
  4. Add the corn with all of the can’s water / bring to a boil
  5. Add the broccoli pieces to pot / cover with lid / cook for 20 min.
  6. Add content of pot to blender until half way up, depending in size in 1 or 2 batches, and add your broth on top to liquify everything
  7. Leave desired consistency as you please; super smooth or chunky
  8. Once everything is liquified return to pot
  9. Now finish seasoning, pepper and salt to taste, mix well and serve.

  1. Chop cauliflower and garlic
  2. Throw cauliflower, garlic and walnuts all together in a plastic bag
  3. Add olive oil salt pepper / shake well
  4. Dump in oven tray and cook at 350 for 30 min
  5. On the mean time make broth
  6. Depending on your diet use only stock or half stock / half milk
  7. Add content of pot to blender until half way up, depending in size in 1 or 2 batches, and add your broth on top to liquify everything
  8. Leave desired consistency as you please; super smoooth or chunky
  9. Once everything is liquified return to pot
  10. Now finish seasoning, first Parmesan cheese and mix well, taste and follow with pepper and salt to taste, mix well and serve.

  1. Chop spinach onion mushrooms garlic
  2. Sautee the onions and when golden add the chopped spinach / cover with lid and cook for 15 / min. / remove from pan and put aside.
  3. In same pan add mushrooms and garlic cook for 15 min
  4. Add content of pot to blender until half way up, depending in size in 1 or 2 batches, and add your broth on top to liquify everything
  5. Leave desired consistency as you please; super smoooth or chunky
  6. Once everything is liquified return to pot
  7. Now finish seasoning, first Parmesan cheese and mix well, taste and follow with pepper and salt to taste, mix well and serve.
